The Waterford Distillery is simply a unique Irish whiskey experience which is rightfully claiming to be the world’s largest producer of organic and biodynamic whiskies. In Ireland’s Sunny South East, warmed by the Gulf Stream, temperate, moist air crosses fertile soils to produce a verdant landscape – & the world’s finest barley. Since barley is the source of malt whisky’s complex flavours, it makes abundant sense to focus on where and how the barley is cultivated. Those flavours are shaped by place, by the soils that nourish its roots, by the microclimate in which it ripens. By terroir.

Waterford boast using the most state of the art equipment to enable them to ferment their whisky for over 120 hours. To keep the different types of barley seperate, to make whisky unhurried.

The Lacken 1.1 is a single farm origin whisky brought to you by Waterford Distillery. The whisky was distilled from barley grown in County Wexford by Francis Kehoe at his Lacken farm located two miles east of New Ross and the River Barrow on the Wexford-Kilkenny border. The local environment means that this barley is of extremely high quality. Using ex-Bourbon, new oak, French Oak, Port and Marsala wood we find this whisky delivers great complexity with a superb mouthfeel.

Tasting Notes

Nose: complex and fruity. Orange, dark chocolate, grapefruit, apricot dried berries, straw, barley, fruit cookies, milky and floral notes (rose).

Palate: spicy and smooth. White pepper, cocoa powder, orange zest and caramel on the attack, followed by gourmet flavours of nuts and grapefruit and an earthy touch.

Finish: refined and delicious. Beautiful notes of sweet spices complete an enveloping and creamy texture.
