Signatory Vintage are an independent bottler founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found. Signatory currently bottle at three strengths: 43%, 46% Unchillfiltered (UCF) and Cask Strength.To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced.Signatory Vintage’s aim is to offer as wide a range of whiskies as possible, some of which are not even bottled by the proprietary distillery. This allows malt enthusiast to sample the huge variety of subtle differences which occur between casks.

You can almost hear the heartbeat of whisky as Macallan lies in the central district of whisky making territory. This distillery which was built in 1824 near the river Spey in a tranquil Speyside setting is owned by Edrington & William Grant & Sons. Now Macallan 50 Years Old is most famous for being James Bond’s favourite dram so something special is truly happening behind the closed doors of this distillery which is magical. Macallan is a name in whisky that is held at the highest regard and delivers time and time again.

This single malt whisky was distilled in 2007 at an undisclosed distillery before being placed in refill sherry butts and left to mature for 13 years. In 2020 it was bottled at 46% abv as part of the Signatory Vintage Un-Chillfiltered Collection. We’re not going to mention any names of the distillery we know it is but what we can say is it’s located in Craigellachie, Moray and it’s owned by the Edrington Group. Now let your imagination run wild!

Our Tasting Notes

Nose: Dried sherry notes lead to beeswax and dried figs. There’s chocolate chip cookie dough and dark fruits with some cherries and tobacco.

Palate: Cherries and figs, roasted coffee beans, dark chocolate, vanilla fudge and rich malt.

Finish: Plum jam and Cherry Ripe bars.
