Dark Valley is about one man, one man with a vision to showcase Australian whisky to the world at its very best. Alex Moores loves whisky. As a social activity, as a sensory experience, as a conversation topic, as an academic exercise. He has been drinking whisky since 2007, but his love of the industry didn’t truly begin until his first guided tasting a couple of years later. From that moment on, he has been trying as many different drams with as many different flavour profiles as possible. For him, it was all about devouring the information, nosing and tasting profiles, and meeting all the wonderful people from distillers to bar staff.

Alex had a vision that he would bottle whiskies from all Tasmanian distilleries in a way that showcased the raw and elemental qualities of the different distilleries. A dedicated Australian independent bottler ensuring that bottles of the finest product possible end up in glasses across the country. Dark Valley comes from the Gaelic name Glen Dhu, which is now the headquarters of Dark Valley Whisky. The name is both a homage to the Scottish Gaelic roots of uisge beatha as the drink and to the Tasmanian natural resources that allow Tasmania to produce such world-class whisky.

Known for our single cask, cask strength releases, Dark Valley are proud to be adding a different type of product to the range: a vatted malt that combines several of their amazing casks across several Tasmanian distilleries. This release has been crafted to combine flavours commonly associated with bourbon casks (vanilla, tropical, coconut) with the richness of fortified (berries, spice, syrup) and some red wine casks to balance the tannin. The underlying malt continues to shine through in a recognisably Tasmanian whisky. In addition to being a product that is greater than the sum of its parts, a vatting allows the Dark Valley producers to fill more bottles and bring them to you at a much lower price than single casks. This should provide a lovely entry point for those new to Dark Valley, or Tasmanian whisky in general, and a quaffable complement to any Dark Valley single cask.

This vatted malt takes whisky from several Tasmanian distilleries and showcases exceptional flavour, mouthfeel and quality at a lowered ABV of 45%. Matured in ex-Bourbon barrels, ex-Sherry barrels, ex-Port barrles and ex-Red Wine barrels.

Our Tasting Notes

Nose: Stewed orchard fruits mainly peach and nectarine, vanilla pod, toasted fig, polished oak and raspberry jam.

Taste: Cherries and plums, dark chocolate, almond meal and deep oak.

Finish: Long with cocoa, cherry jam and spicy oak.
