The Bimber Distillery is located in London, England and was founded in 2016. The first casks of Bimber were laid down on the 26th of May 2016 and these casks were release three years later in September 2019 with a limited release of 1000 hand numbered bottles. This release sold out in under three hours, why? It’s the fruity new make spirit that is created here, it balances so well with re-charred oak barrels, fortified wine barrels and bourbon barrels. Bimber also sources its barley from a single farm, it malts and mashes this barley by hand and then slowly ferments the wart in their very own washbacks for 7 days. A fruit forward whisky with a very bright future.

This cask strength Ex-Bourbon cask small batch release has been bottled at 51.6% ABV and is un-chillfiltered with no colour added. It was limited to only 5000 bottles. Bourbon barrels are constructed from Quercus Alba, or white oak, commonly known as American oak. This wood type complements the underlying character of the Bimber accessible fruit-forward spirit, imparting sweet, rich vanilla and caramel flavours alongside perfectly balanced spice. Every cask has been specially selected and married together in our hand-made oak vat, before being bottled.

Our Tasting Notes

Nose: Stewed pineapple, soft vanilla, malty cereal notes, garden herbs and freshly cut grass.

Palate: Stewed tropical fruits, fragrant rosemary and lavender, caramel sweetness and some raisin, cinnamon and ginger spices.

Finish: Medium to long with tropical fruits, fresh oak and stem ginger.
