Lindores Abbey is officially recognised site of the first recorded distillation of Scotch whisky. It was back in 1494 that King James IV commissioned Brother John Cor at Lindores Abbey to make aqua vitae with eight bolls of malt. After a break of almost 523 years the stills at Lindores Abbey Distillery are flowing. Twenty years in the making and we can now enjoy a whisky again from where it all began.

Lindores Aqua Vitae is distilled in pot stills and then infused with a belnd of herbs and spices which include and not limited to lemon verbena, cleavers, douglas fir and sweet cicely, all of which are foraged from the grounds of the ancient Abbey. This spirit was created to an ancient recipe believed to be similar to the first ever Aqua Vitae produced in Scotland back in 1494. Feeling a little bit of history education time, grab a bottle and perhaps after experimenting with the flavours grab some ice, a twist of orange, sit back and enjoy this wonderful spirit.

Our Tasting Notes

Nose: Plenty of fresh herbs, pine needles, aniseed, stewed raisins, poached oranges, soft honey sweetness and lemon sherbet.

Palate: Cloutie dumpling, dried orange peel, fruit and nut chocolate, cocoa, warm lemon juice with ginger, clove aniseed and cinnamon.

Finish: Dried orchard fruits, shaved oak and soft warm spices.
