The Lark story is not so much about the distillery but the man behind he distillery and for that matter behind the seed of Australian Whisky distilling as we know it today.

Bill Lark realised that that everything you need for a world-class whisky was in Tasmania – rich fields of barley, an abundance of wonderfully pure soft water, highland peat bogs, and the perfect climate to bring all the ingredients together in a marriage of science, art and passion. The vision of producing Tasmanian malt whisky was born on a trout fishing trip in the highlands of Tasmania. Bill’s father in-law Max produced a wonderful bottle of single malt, and as they enjoyed a drink in the park at Bothwell, surrounded by Georgian buildings, barley fields and the gentle flowing of the Clyde River, Bill remarked to Max, “I wonder why there isn’t anyone making malt whisky in Tasmania”.

Lark Christmas Cask Release is a yearly tradition by the craftsmen at the Lark distillery. It’s a way of sharing a merry single malt which is full of Christmas spirit. Each year a Tasmanian patisserie selects Tasmanian red wine casks which they fill with fruit jus, they use the jus to make the most delicious fruit mince pies. When the casks are emptied they are transported to the Lark Distillery and filled with some of the best seasonal spirit. This year it was single malt taken from the Old Hobart Distillery, specially selected by the distillers. The casks were filled with the spirit and left to mature resulting in a whisky with the smell of dried dark fruits, festive spices and balanced oak.

Bottled at 45% abv and full of Christmas cheer.

Our Tasting Notes

Nose: Dark fruits of plums, figs and dates, there’s rum soaked raisins, stewed blood oranges, baked apple strüdle, freshly cooked sweet pastry and Christmas spice of nutmeg, clove and cinnamon.

Taste: Orange citrus, stewed apples, hints of earthy peat smoke, spices of cinnamon, clove, nutmeg and allspice.

Finish: Orchard fruits, dark fruits and Christmas spice.
