Lark Distillery has been renowned for producing whisky for many years and it has collected many awards for its balanced well matured spirit. It is only fitting that the distillery would one day produce an outstanding gin to compliment its knowledge of spirit production. Forty Spotted Gin has been created by the distillery to offer a product that defines elegance and refinement. Named after Tasmania’s rarest bird, the Forty-spotted Pardalote (Pardalotus quadragintus) – an endemic creature. Inspired by the raw beauty of Tasmania, Forty Spotted are incredibly passionate about what they create.

Forty Spotted Tassie Bush Honey brings together the warming sensation of rooibos tea and the silky sweetness of Tasmanian bush honey. A fleeting hit of fragrant juniper quickly yields to a wave of caramel, consumed by a flood of floral meadow notes and a touch of peppery heat. It is cased in a bespoke, new Forty Spotted bottle, but with the same Tasmanian flavour profiles you’ve come to know and love.

Tasting Notes

Nose: Earthy and floral notes, buttery with lemon zest, mixed peel and soft garden herbs.

Palate: Creamy honey, herbaceous, butterscotch sauce and hints of juniper.

Finish: Long and clean with delicate flavours.
