Signatory Vintage are an independent bottler founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found.

Signatory currently bottle at three strengths: 43%, 46% Unchillfiltered (UCF) and Cask Strength.To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced.Signatory Vintage’s aim is to offer as wide a range of whiskies as possible, some of which are not even bottled by the proprietary distillery. This allows malt enthusiast to sample the huge variety of subtle differences which occur between casks.

The Deanston Distillery is located on the banks of the River Teith, eight miles from the town of Stirling. It is the largest distillery owned by Burn Stewart Distillers Ltd, who also own Bunnahabhain Distillery and Tobermory distillery. Deanston Distillery was traditionally a working mill but was transformed into a distillery in 1966. The constant supply of pure water from the River Teith contributed to the decision to turn the mill into a distillery and Deanston is now one of only a handful of distilleries in Scotland to be self-sufficient in electricity, with power generated by an onsite hydro-electroc facility. Deanston sits in the Highland single malt region of Scotland and produces whisky which is handmade by ten local craftsmen.

You should expect a bouquet of flavours, honey, cloves, ginger. Like a herbal tonic this malt is heavy and malty with medicinal characters.

This single malt whisky was distilled in 2007 at the Deanston distillery on before being placed in single 1st Fill Sherry Butt and left to mature for 12 years. In 2020 it was bottled at 64.5% abv as part of the Signatory Vintage Cask Strength Collection. Only 630 bottles worldwide were produced of this fine liquid for us all to enjoy.

Our Tasting Notes

Nose: Chocolate swirl buns and red fruits, orange citrus and old oak.

Palate: Raisins and sultanas, plums and figs, dark chocolate and spiced oak.

Finish: Dark chocolate, white pepper and fruit pudding.
