Hand-harvesting the agave and slow-roasting it in earthen fire pits, fermenting the bagaso naturally in traditional wooden vats and, finally, double-distilling it in small copper and clay stills… it’s all part of our master mezcalero’s deepest desire: to create a cut of mezcal so divine that it invokes the spirit of generations before him. It’s this sacred distillation of earth, fire and history that he calls el Corte Vetusto — the Ancient Cut.”

The Ancient Cut is indeed not only created in honour of the old ways of production but also referrs to the final part of its creation – the cut of the distillate which seperates the heads (puntas) & tails (colas) from the heart (corazon). Most distillers reduce the ABV or subtly change the Mezcals character through the addition of local spring water, however there are some who alter their Mezcal using the puntas and/or tails. This is one of the practises which Maestro Juan Carlos Gonzalez Diaz does.

Another remarkable thing is the use of both copper and clay pot stills. 1st distillation is carried out in a copper pot and the 2nd in a clay pot still, making this a very unique brand and truly one of a kind, as I don’t know of another producer who uses this technique!

Our Tasting Notes

Nose: Earthy notes dominate, honey sweetness and hints of smoke.

Palate: Vegetal and earthy with soft smoke and creamy vanilla.
