The Caol Ila Distillery, The name Caol Ila comes from the Gaelic ‘Caol Ila’ meaning ‘Sound of Islay’ which is the stretch of water which separates Islay from Jura. The distillery was founded in 1846 and has been very successful through its long history. The distillery draws water from the nearby loch which is surrounded by myrtle and heather. As did most distilleries it closed during the Great Depression from 1930 to 1937 and was reconstructed from 1972 to 1974. Juggling between old traditional methods and modern methods of using new technology. This distillery produces whiskies that have chocolate, citrus and floral notes as well as tangy and peaty, which is typical of an Islay whisky.

North Star Spirits is an independent bottler based in Glasgow, Scotland. They pride themselves on bottling the finest single malt Scotch whisky, blended whisky and blended malt Scotch whisky. Producing artisan single cask whisky from various regions of Scotland as well as bottling rums, gins and Bourbon whiskey. All products are small batch, bottled at cask strength.

This single cask single malt whisky was distilled at the Caol Ila distillery before being placed in a 1st fill Oloroso Sherry Butt and left to mature for 11 years. In October 2020 it was bottled at 58.2% abv as part of the North Star Cask Series Number 011. Only 410 bottles were produced for worldwide distribution.

Our Tasting Notes

Nose: Red berries and creamy vanilla, dried dark fruits and sultanas, soft peat smoke and some freshly fired cap gun pellets.

Palate: Orchard fruits of apple and pear combines with garden herbs and lemon citrus, white pepper and oak spice.

Finish: More red berries combines with toasted pistachio’s and dark chocolate.
