The Essence of Chardonnay from an Exceptional Vintage Year.

Le Blanc de Blancs is produced in small quantities in exceptional years only and fully expresses the superb calibre of great Chardonnay from the best crus of the Côte des Blancs. After 6 years ageing in our cellars, remarkable minerality and low dosage make this an outstanding wine that can accompany a variety of flavoursome dishes including poultry and fish, or be served on its own to celebrate a special occasion.

Tasting Notes:
A bright, light yellow colour, with a very fine and abundant bubbles.

On the nose, delicate, but already very expressive, the nose features a great aromatic freshness, with notes of lemon, white fruits, yellow plums and frangipani.

Right from the start, it is light, yet voluptuous and vibrant, showing a silky texture with a touch of raciness. It features notes of citrus fruit and white flowers, culminating in a long finish, tightly wound on a pure line of the chalky minerality that Côte des Blancs is famous for.

Dosage: 6g/l

Ageing:
The wine is aged an average of 6 years on the lees before disgorgement in order to develop complexity, intensity and roundness.

Pairing with food:
Le Blanc de Blancs 2012 is a great epicurian apéritif on its own, but will also pair beautifully with seared sea scallops with preserved Meyer lemon or with a turbot fillet with a seaweed-infused beurre blanc sauce.

History:
One of the original 26 Grand Marque Champagne Houses, Ayala has had a noble history since its inception in 1860 when Edmond de Ayala received the magnificent Chateau as the dowry for his wedding. Located in Aÿ, in the heart of the Montagne de Reims vineyards, Ayala naturally focuses on Grand Cru Pinot Noir for its Brut Majeur and its Vintage Brut.
